The name "Taureau" is found in regions of France, particularly in Normandy, as a phenolic bittersweet apple variety used in blends for the production of cider and "Pommeau de Normandie". This variety is a traditional local cultivar, lacking official status as a breeding variety with described agrotechnical characteristics.

There are mentions of the apple variety "Sang de Taureau" ("Bull's Blood"), which is a medium-sized tree with intensely red, almost black, fruit. The fruits of this variety have firm white-green flesh and belong to a late maturity group in October–November.
