The variety belongs to the small-grain types and is traditionally used in Italian cuisine for preparing side dishes, salads, and risotto. The grains of the variety possess high mechanical strength; they do not stick together during thermal processing, maintaining their structure.

The variety is quite old. Research notes its susceptibility to infestation by the nematode Aphelenchoides besseyi, which causes "white tip" symptoms on leaves. The variety also demonstrates the ability to maintain the oxidative capacity of the rhizosphere and has been studied in the context of grain drying processes.
