Originario or Comune represents an heirloom genetic line of rice introduced to Italy from Asia in the early 20th century. In Italian classification, this term was applied to denote a category of rice with specific morphological traits, rather than a single specific variety.
The rice grain of this group is short, rounded, with a pearly hue and a length of no less than 5.2 mm with a length-to-width ratio of less than 2. Varieties of this group possess high absorption capacity, increase rapidly in volume when cooked, and soften easily.
Due to its softness and ability to become creamy, the rice is used for preparing soups, puddings, desserts, and arancini. Genetic studies note an increased iron content in this type of rice.
