The variety is a flat peach (paraguayo type) with white flesh. It was developed within the framework of a program for the study and selection of local varieties discovered during expeditions in Aragon.
MONTEJOTA is used not only as an independent commercial unit but also as genetic material (parental form) for further breeding crosses.
