Matador is a diploid winter rye variety. The plant has a very long stem and medium-length ears with loose to medium density. The ear position varies from horizontal to slightly nodding. The thousand kernel weight is medium, and the color of the aleurone layer is dark.
The variety is used as a grain crop and is included in mixtures, for example with winter vetch, for use as a cover crop or for improving soil structure. Flour from this variety is used in baking. The variety is frequently utilized in agronomic crop rotation studies.
