The plant has a shorter and stiffer straw compared to the parent form Gros Bleu. The ear is long, medium-compact, and has a milky-white hue. The grain is large, yellow in color, blunt in shape, and is characterized by good test weight.

The variety possesses high baking qualities. In phytopathological studies, Bon Fermier was historically used as a reference differential variety for the identification of yellow rust pathogen races.
