Centauro belongs to the category of semi-dwarf varieties with a plant height of about 80 cm. In studies of physiological traits, the variety stands out for its high rate of seedling and seminal root growth. In scientific works, it often serves as a reference sample when studying grain filling and nitrogen use efficiency.

The Italian-bred variety was widely used in the baking industry, in particular, for the production of traditional Tuscan bread. Currently, the variety is considered historical and has been replaced by newer breeding achievements in many regions.
