The spring soft wheat variety Sappo possesses high growth vigor and is genetically classified by the presence of specific protein alleles, particularly the high-molecular-weight glutenin system.

In breeding practice, the variety is known as a carrier of powdery mildew resistance genes, such as Pm2 and Pm6. It has also been used in scientific studies of Septoria resistance and served as a control standard for evaluating the bread-making quality of flour and the composition of protein subunits.
