The variety was developed using genetic material from CIMMYT/ICARDA and was actively introduced into production in Spain starting in 1989, displacing older tall varieties in southern regions. The purpose of the crop is the production of pasta.

The plant belongs to the selection period of short-stemmed varieties. Jabato is characterized by stability of yield and quality, and also demonstrates tolerance to soil salinity. The variety is often used as a control sample in studies of the prolamin composition of grain proteins.
