The durum wheat variety Monastir is used primarily for processing into pasta, couscous, and bulgur. It has been actively tested and cultivated in North African regions, particularly in Tunisia, and in the Middle East.

During agronomic trials conducted in Lebanon, plant height ranged from 55 to 78 cm. The variety is a subject of scientific research focused on evaluating grain technological qualities, resistance to fungal diseases, including tan spot, and the impact of various farming methods.
