The variety was obtained as a result of breeding conducted by a research institute in Foggia. The parental forms were the Adamello and Appulo lines. The variety is known for high genetic stability and the ability to form mycorrhizal associations.

In the scientific community, Ofanto is widely used as a classic genotype for mapping the durum wheat genome and in comparative agronomic trials. The grain of the variety possesses quality indicators typical for raw materials used in the production of pasta.
