The Psathas variety belongs to folk selection and historically occupied significant areas in Cyprus. It was traditionally used for the production of bread, pasta, bulgur, and trahana.

In agronomic studies, this variety is mentioned as important genetic material for hybridization. In terms of its economic indicators, it was inferior to modern introduced varieties, particularly in yield and lodging resistance, which is why it was eventually replaced by more productive breeding lines.
