Corvo is a traditional European flint corn variety that has been grown for centuries in the Galicia region of Spain. It is a landrace, not a product of modern breeding.
The grains of the variety have a characteristic dark-colored, almost black pericarp, which is due to a high content of anthocyanins, specifically cyanidin, in the aleurone layer. At the same time, carotenoids are practically absent in the grain composition.
Due to its chemical composition, the variety is considered a functional food product. The main purpose of the crop remains local traditional flour production and the manufacture of bakery products from it.
