Zea mays L. subsp. mays (Sweet Corn Group)
Canning of sweet corn is a method of long-term product storage based on fixing the dessert state of kernels at the milk stage of maturity. Due to the rapid fermentation of sugars, processing must be carried out no later than 6–12 hours after harvest.

A key requirement for canning is harvesting the ears exclusively at the milk stage, when the kernels have a tender consistency and contain the maximum amount of sugar. Using fodder varieties for this purpose is impractical, as they retain a tough pericarp even after heat treatment, whereas sweet varieties allow for the desired taste and texture.
The technological process includes mandatory blanching to halt enzymatic processes and preserve kernel color. Since corn is a low-acid product, it requires strict high-temperature sterilization. The use of excess salt during the boiling stage is not recommended, as it negatively affects the tenderness of the kernel skin.
