Due to the high content of pectin substances and the delicate structure of the pulp, peaches are most often processed as canned segments in syrup or puree, as juice extraction from the fruit is technologically difficult. The use of saline solutions during processing is exclusively auxiliary and is used only for short-term protection of the pulp against oxidation and browning, rather than for preservation.
