For industrial processing, sweet corn is harvested at the milk or milk-dough stage, when the kernels in the middle of the ear exude a sweetish juice under pressure. A critical factor is the rate of sugar-to-starch conversion, which makes the period of technical maturity extremely limited, requiring processing to begin within a few hours after harvest.
The suitability of a hybrid for processing is determined by its genetics. The sh2 (supersweet) groups are most preferred, as they possess a slowed sugar-to-starch conversion process, which extends the harvest window to 6–7 days and preserves the tender consistency of the kernels for longer.
Technological evaluation includes the raw material's ability to maintain integrity and texture during sterilization or freezing, as well as flavor profiles related to the content of readily soluble sugars. Unlike grain corn, the industrial suitability of sweet corn is focused not on physiological maturity, but on ear uniformity for mechanized harvesting and the preservation of the tender kernel tissues.
