Table beet is a cold-hardy crop: seeds germinate at +4…+6°C, but seedlings perish at frosts down to -0.5…-1°C. Temperatures below +8°C at the beginning of the growing season trigger undesirable bolting. The optimal range for development is +15…+25°C under high light levels.

Soil requirements include a neutral pH of 6.0–7.0 and an increased demand for boron and potassium. A vigorous root system that penetrates to a depth of up to 1 meter requires deep soil tillage. Due to the formation of seed balls containing 2–6 seeds, mandatory thinning of seedlings is necessary in open field conditions.

Violation of growing conditions, such as excessive moisture combined with high temperatures, leads to the formation of white rings on the cross-section of the root, which reduces the market quality of the produce.
