Corn suitability is determined by endosperm structure, the ratio of horny to floury layers, and the efficiency of germ separation. Processing parameters depend on the intended use of the grain: for the production of grits, flour, or starch.

The technological processing scheme focuses on the layer-by-layer separation of grain components, and modern quality requirements, including stress-crack indices and fat content, are often regulated by direct contractual agreements between the supplier and the consumer.
