Corn suitability is determined by endosperm structure, the ratio of horny to floury layers, and the efficiency of germ separation. Processing parameters depend on the intended use of the grain: for the production of grits, flour, or starch.

The technological properties of the grain are defined by its type: flint corn with a high horny layer content is optimal for the production of polished grits, whereas dent and semi-dent types are used for the manufacture of flour, fine grits, and in the starch and molasses industry. A critical stage of processing is the separation of the germ, which accounts for up to 15% of the grain mass, as its residues reduce shelf life and the sensory quality of the products.

Unlike other cereals, corn requires mandatory hydrothermal treatment to soften the grain structure, facilitate the removal of pericarp, and ensure efficient germ extraction. The technological processing scheme focuses on the layer-by-layer separation of grain components, and modern quality requirements, including stress-crack indices and fat content, are often regulated by direct contractual agreements between the supplier and the consumer.
