The protein content in the seed is distributed unevenly: in the kernel, this figure can reach 49–50%, while in the seed coat it is about 10%, which makes dehulling an effective way to increase the nutritional value of the product.

This trait is determined by varietal characteristics and the crop's nitrogen fixation capacity, which allows for the formation of high yields with high protein levels without the application of nitrogen fertilizers. In modern breeding varieties, a high protein level is combined with a low alkaloid content, which typically does not exceed 0.1%.
