For garden chrysanthemum, suitability for cutting is classified by the method of shoot formation: large-flowered varieties require disbudding to obtain a single inflorescence up to 25 cm in diameter, whereas spray and small-flowered types, including the Santini group, develop multiple inflorescences on a single shoot.

Harvesting times depend on the development stage: large-flowered varieties are harvested at the colored bud stage with a diameter of 40–60 mm followed by further maturation in a solution, while small-flowered ones are harvested after the green coloration disappears in the center of the inflorescences. The most important factors for marketability are photoperiodic flowering control, a nutrient regime without an excess of nitrogen to maintain shelf life, and preliminary mechanical stem treatment to improve water absorption.
