Fresh-market cucumber cultivars differ from pickling and canning types by their more tender skin and succulent, sweetish flesh. Their morphology often includes a smooth surface or slightly pronounced tubercles, with the density of the epidermal tissues in such fruits being significantly lower than in cultivars intended for processing.
These cultivars are focused on maximizing taste qualities when consumed fresh. During processing or prolonged exposure to brine, fresh-market cucumbers are prone to softening or cracking, as their structure is not adapted to maintaining shape and crispness during thermal or chemical treatment.
