Unlike grain varieties intended for drying, vegetable broad beans are harvested at the milky stage. When consumed whole, including the pods, the fruits are picked at a very young age while the pods remain succulent. In specialized sugar varieties, the absence of an inner parchment layer allows the entire pod to be used as a vegetable crop.

For the consumption of seeds only in fresh form, broad beans are harvested upon reaching their maximum varietal size at the milky stage. Vegetable broad beans are characterized by a relatively low phasein content, which allows for their use without prior heat treatment, while they are distinguished by a creamy texture and a nutty flavor.
