Rhubarb yield is measured by the mass of marketable petioles suitable for sale and averages 15–23 t/ha. With the use of plastic covers and optimal nutrition, these figures can reach 34–41 t/ha. Productivity varies significantly depending on the age of the plantation, peaking in the 3rd to 5th year of life, as well as on varietal characteristics and the light level of the site.
The harvesting method involves manual pulling of 15–30 cm long petioles in 4–6 pickings per season over 8–10 weeks. In the first year after planting, the crop is not harvested to strengthen the root system; in the second year, no more than 15% of the potential volume is removed. Excessive harvesting intensity and late harvesting dates deplete nutrient reserves in the rhizome, which reduces future productivity and may lead to plant death.
