The technological suitability of cauliflower for freezing is determined by the ability of the florets to retain their structure and properties when exposed to low temperatures through mandatory blanching and the selection of varieties with a dense curd structure.

The suitability of cauliflower for freezing requires mandatory blanching of the raw material to inactivate enzymes. Ignoring this procedure leads to darkening of the florets, changes in taste, and deterioration of the product's texture during storage at low temperatures.

The physical properties of cauliflower tissues are characterized by limited resistance to ice crystal growth, which causes cell damage and the development of wateriness. To maintain quality, heads must be separated into florets ranging from 2.5 to 8 cm in size, as freezing whole heads is ineffective.

The selection of varieties for freezing is based on indicators of high floret density and resistance to physiological defects, such as riciness or premature curd loosening. Suitability is determined not by the presence of specific genetic markers, but by market characteristics that ensure structural integrity after thawing.
