Freezing rose hips for 24–48 hours is used as a quality management tool. Low temperatures cause partial destruction of cell walls, promoting the conversion of starches into sugars, which improves flavor characteristics and facilitates the production of juices, purées, and syrups.
Unlike traditional drying, freezing helps avoid thermal degradation of biologically active substances and color changes in the raw material. Exposure of fruit left on the bush to temperatures in the range of -3°C to -12°C does not significantly reduce vitamin C levels while increasing the content of vitamin P and oligosaccharides.
