The technological suitability of berries for freezing is determined by their ability to retain organoleptic properties after thawing. Varieties with thick skins and fleshy pulp are considered most suitable for this purpose, as they better retain moisture and preserve structural integrity.

The agrobiological resistance of grapes to frost characterizes the ability of the vine and buds to withstand cold. The primary scientific criterion for evaluation is the LT50 index, which determines the temperature at which 50% of the primary buds perish; the level of this index depends on varietal genetics, the degree of hardening, and vine maturation.
