Five permitted varieties may be sold under the trademark: Ibérose, Goulurose, Edenrose, Jardirose, and traditional pink garlic. The plant belongs to the Creole type, characterized by low bolting capacity.

The bulb has white outer scales and cloves with pink skins, numbering from 8 to 12. The stem is rigid, and early scape removal is practiced during cultivation. The garlic is characterized by a long dormancy period, which ensures long-term storage.

This garlic is best adapted to the climate of southern France; in more northern regions, the bulbs may grow smaller due to the limited winter hardiness of Creole-type varieties. Traditionally, the produce is tied into special bundles called manouilles.
