Various plants may be classified under the name "Rocambole," including elephant garlic (Allium ampeloprasum), varieties of true garlic (Allium sativum var. ophioscorodon), and sand leek (Allium scorodoprasum). No single state-registered variety exists under this name, which leads to variability in the characteristics of planting material.
Elephant garlic is a robust plant 80–100 cm in height with waxy-coated leaves. Bulbs reach a weight of 200–450 g and a diameter of 10 cm, dividing into 3–6 large cloves. The flavor of the product is less pungent than that of ordinary garlic and is described as garlicky-onion.
The vegetation period of the crop is approximately 120 days. Flower stalks are usually sterile; therefore, propagation occurs primarily through vegetative means—via bulbils formed on the basal plate of the bulb. The plant is used in cooking and can perform a decorative function due to its large inflorescences.
