Santenese is not a bred variety, but a traditional product with a centuries-old history of cultivation in the area of Santena and surrounding territories. The plant is characterized by a specific terroir — sandy soils with low lime content, typical of the Pianalto area.
Visually, the spears are distinguished by a pointed tip and an intense green color with violet shades. The average length is 20–22 cm. When harvested underground, the lower part of the spear remains etiolated and white, which creates a color contrast with the upper part. The product is intended for fresh consumption.
