The variety is a tall plant with a vigorous leaf rosette. The leaves are yellow-green in color and characterized by the presence of broad white petioles. The texture of the leaves is more tender compared to other varieties; the plants are characterized by a rapid growth rate.

The purpose of the variety includes the use of both the leaf mass, consumed like spinach, and the succulent, fleshy petioles, which are prepared like asparagus. The plant does not form an edible root, as it belongs to the leafy variety of beet.

Bionda di Lione is considered a traditional variety and is known by a number of other names in different countries, including Gelber Lyoner, Amarilla de Lyon and Blonde met Witte Steel.
