The Romanesco tardivo variety forms medium-sized curds of light-green or sulphur-green color. Taste qualities are characterized as more delicate and sweet compared to traditional cauliflower varieties; during culinary processing, the vegetable has a less pronounced odor.

The plant is distinguished by vigorous growth and requires an increased nutritional area when planting. Traditionally, the variety is used for harvesting in the autumn-winter period, as it belongs to the group of late varieties. Both historical varietal populations and modern hybrids may be sold under this name.
