The name comes from the Catalan word meaning "peasant" or "farming" and refers to a local type of cabbage cultivated for centuries by local growers. It is a large plant characterized by leaves that easily separate from each other.
The cabbage is valued for its mild taste and aroma, which allows it to be consumed not only cooked, but also raw in salads. It is an important ingredient in the traditional cuisine of Ibiza and is used almost entirely for food without waste.
The plant is a seasonal product, with the main harvest period falling between November and the end of January.
