The plant is a leafy crop that does not form a head, but grows in a loose bunch. The leaves are large, oval, with a pronounced texture and thick white petioles; the color varies from dark green to glaucous-green. The plant height is 30–45 cm, and the width is 45–60 cm.
Technical maturity is reached approximately 85 days after planting. The crop is cold-hardy, capable of overwintering in mild climates, and possesses relative heat tolerance. The leaves are distinguished by a sweet taste, and the petioles are comparable in texture to celery.
The plant belongs to the group of traditional folk varieties (landraces). Both leaf blades and fleshy petioles are consumed; the latter are a key ingredient in the traditional Portuguese soup caldo verde.
