Urfa Biber is a landrace variety adapted to the climate of southeastern Turkey. Fruits of this variety are characterized by mid-to-late maturity and are harvested only upon reaching a dark burgundy, almost black color.
The pungency level of the fruits varies in the range of 30,000 to 80,000 Scoville heat units. The characteristic smoky, fruity, and chocolate-raisin flavor is achieved by alternating daytime sun drying and nighttime 'sweating' of the harvested crop.
