In the first year of vegetation, the plant forms a rosette of dark green leaves and a fleshy conical taproot. In the second year of life, a branched flowering stem develops, reaching a height of up to 1.5 meters.
Marketable heads are formed by forced forcing of root crops in the absence of light. The finished product consists of dense, elongated heads of white or creamy-yellow color, containing the glycoside intybin, which gives them a characteristic bitterness.
The plant is considered a cold-hardy crop. Consumption is possible in fresh, boiled, stewed, or baked form, and the root crops can serve as raw material for the production of inulin-containing coffee substitute.
