The Olympic variety belongs to the species Hordeum vulgare L. and is a mid-maturing two-row barley. Its pedigree includes the Quench and Belgravia varieties. In some registries, the variety is classified as spring barley, however, a number of European classifications present data covering both spring and winter forms.
The variety is intended for the brewing industry. Grain quality studies have shown a high extract content level, reaching 83.3%, as well as optimal indicators of proteolytic and amylolytic modification.
