The Pek variety is a spring two-row barley with a genetic background of TU 50-77/Sundance//Novo.294. The plant is characterized by an increased beta-glucan content at the 6.93% level and a high concentration of free amino acids, reaching 12.5%.

In agronomic and biological research, the variety is often used as genetic material for studying protein accumulation processes, hordein composition, and plant adaptation mechanisms to drought conditions.
