The Extertaler Katzenkopf variety, also known as Extertaler, is a regional German variety from the historical Lippe region. The tree is characterized by vigorous growth, reaching a height of 6–8 meters and a crown width of 4–6 meters at maturity. It is characterized as a long-lived and robust plant, suitable for cultivation in orchards with sparse planting.

The fruits are large or very large, have a green-yellow skin, often with a reddish blush and numerous dots. The flesh is yellowish-white, firm and juicy, with a moderate sweet-and-sour taste. Picking maturity occurs from mid-October; the fruits acquire optimal flavor by December, maintaining consumer qualities until May.

The variety is classified as a culinary apple. It is widely used in cooking, in particular for baking and juice production. It possesses good winter hardiness and the ability for long-term storage.
