The fruits are small to medium in size, with firm, crisp, fine-grained white or cream-colored flesh. The flavor is rich, sweet, with distinct notes of anise or licorice. Phenotypic differences include coloration: in Fenouillet Gris, the skin is dull yellow with gray-brown russeting; Fenouillet Rouge is characterized by a reddish-brown blush.
The trees have moderate vigor, form a compact or spreading canopy, and bear fruit on spurs. The varieties are diploid and self-incompatible, requiring cross-pollination with plants from the same flowering group. Harvesting takes place in mid-October; the fruits are suitable for storage for up to 3–4 months.
Varieties of the group are used fresh as dessert apples and are also suitable for cider production.
