The variety is autochthonous to the Piedmont region, with a historical range in the Val Chisone valleys and origin in the municipality of San Germano Chisone. In literature, the variety is found under the synonyms Grigio Composta and Grigio della Composta.

A unique feature of this variety's use is soaking the fruits in water for 20–30 days for fermentation, as they are considered unsuitable for consumption when fresh. The harvest is gathered in the first and second ten-day periods of October. The fruits are characterized by a crisp texture, an intense aroma, and a sweet taste.
