The Gros Jaune variety is traditionally used in cider production, particularly in the Cotentin region. In pomological literature, the fruits are characterized as sour and are used in blends.

The name of the variety is descriptive and translates as 'large yellow'. Fruit maturity depends on the growing region and occurs from September to November. Reliable botanical descriptions of the tree are absent due to the ancient origin of the variety.
