The variety is the result of folk selection and presumably originated in the 19th century in the canton of Bern. The name of the variety translates as "sour gray," which reflects the presence of a white bloom on the skin of the fruit, giving them a lilac hue.

Apples of this variety are characterized by high juiciness and are valued in cider making for creating a balanced taste. In addition to processing, the fruits can be used for drying or as dessert apples. A feature of the variety is the ability of the fruits to remain on the branches for a long time after ripening and leaf fall.
