The variety belongs to the Lungo A long-grain rice category. The grain has a semi-elongated, tapering shape with a characteristic small tooth at the tip. The grain length is approximately 6.5 mm, with a width of 2.9 mm. The endosperm is crystalline, without white spots.
This variety is not an aromatic type and is characterized by a low amylose content. During cooking, the rice loses some starch, acquiring a slightly sticky consistency. The product is suitable for parboiling and culinary use in side dishes, salads, supplì, and arancini. In the domestic Italian market, it may be sold under the commercial name Ribe.
