The Fragrance variety is the first aromatic rice variety bred in Italy. Its unique aromatic properties are due to the presence of the volatile compound 2-acetyl-1-pyrroline.

Physicochemical analysis of the variety indicates a high amylose content, which determines the texture of the grains after cooking. Scientific literature notes that aromatic varieties of this type may exhibit a tendency to lodging and increased susceptibility to diseases.
