Jermanella, also known as Irmana, Immanu, Immana, or Irmanu, is a Sicilian variety of rye. The variety was historically cultivated in the area of the Nicolosi municipality and has been restored for preservation in the National Register of Varieties.
The plant possesses high tolerance to difficult soil and climatic conditions, successfully developing in sandy and poor soils. Characteristic features of the species include winter hardiness and a shortened growing period.
The grain of this rye is traditionally used for flour production and the making of regional black bread. In an agronomic context, the variety is classified as Secale cereale, although the term jermanella in ethnographic sources may be encountered as a dialectal name for certain wheat species.
