The Négresse variety, also known as Vitelotte, Vitelotte Noire or Truffe de Chine, is an heirloom French variety. The plant is characterized by its tall growth and upright stem, while the green part of the plant may have a purple tint.
Tubers have an elongated, often knobby shape with dark purple skin and flesh of the same color with possible white streaks. Eyes are shallow. The variety is late-maturing with a maturation period of 150 days or more.
The potato has good keeping quality but is considered low-yielding and susceptible to late blight (Phytophthora infestans). Due to its high starch content, the variety boils down significantly and is used in cooking, having a characteristic nutty flavor.
