The variety has an elongated, slightly flattened tuber shape with a medium-pronounced netted 'russet' skin. In terms of marketable yield, Sage Russet outperforms many common varieties, while the tubers are distinguished by an increased content of vitamin C and protein.
The plant possesses high nitrogen use efficiency and produces a lighter color of French fries upon processing compared to standard varieties. The variety has a moderate capacity for long-term storage.
