The variety forms compact bushes with serrated leaves reminiscent of a fir tree in shape. The leaf color is dark green; the veins and petioles have a distinct burgundy hue, which allows the crop to be used in salad mixes.

The plant is early-maturing: harvesting for baby leaves is possible after 21 days, and full maturity occurs on the 32nd day. The variety shows resistance to powdery mildew, but is prone to early bolting under long daylight hours and high temperatures.

Bordeaux is used as a parental line in breeding red-leafed spinach varieties and is intended primarily for fresh consumption.
