The Nord Desprez variety is an important genetic material that was used in the breeding of commercial wheat varieties, in particular for the development of the Stephens variety. Given that the variety belongs to breeding materials of previous years, detailed characteristics of grain market quality or morphological parameters are not presented in modern classifiers.

In scientific research, the variety is used for the identification of races of the yellow rust pathogen Puccinia striiformis f. sp. tritici. It has been established that Nord Desprez carries specific resistance genes, including the Yr3 gene and its associated alleles.
